Because PrepareApStartupVector() stores StackAddress to "mExchangeInfo->StackStart" (which has type (VOID*)), and because "UefiCpuPkg/PiSmmCpuDxeSmm/X64/MpFuncs.nasm" reads the latter with: add edi, StackStartAddressLocation add rax, qword [edi] mov rsp, rax mov qword [edi], rax in long-mode code.
